Anchoves de l’Escala, dedicated to the salting and processing of anchovies. Its treatment process involves a careful selection of the raw material, using traditional methods and know-how that have been inherited from generation to generation since the origins of salting fish, with the arrival in Empúries of the Phoenician and Greek.
